About Fermento Pizza NYC

Fermento is a story of movement: fromItaly to NY, from dawn to midnight, from flour to fire. We're here for the doers, the late-night thinkers and the early risers. Because in this city and in this kitchen, we were BORN TO RISE.

Our name comes fro the Italian word for Fermentation. The patient, living process that gives dough it's strength to rise. Just like the city around us, every rise comes from grit, energy and tradition.

In New York, the busiest hours are Friday and Saturday evenings and any night with a big game, when quoted delivery times can stretch past an hour; ordering before 5 p.m. or picking up yourself avoids the wait. Delivery radiuses are small, often two to five miles, and a minimum order plus a delivery fee is normal, with a tip of a few dollars for the driver on top. Lunch specials such as two slices and a drink, or a personal pie, are the cheapest way to eat at most shops across New York on weekdays. Toppings are priced per item and half-and-half pies are usually free to request. Gluten-free crusts and vegan cheese are increasingly common but often cost a few dollars extra, and cross-contact in a shared oven is standard unless the shop says otherwise.

New York is in New York, in the Northeast, where four distinct seasons shape local life: hot humid summers, snowy winters that can close businesses for a day, and a dense pattern of towns where walking, transit and street parking all matter. Getting around New York is easiest by car; street parking is metered in busy downtown areas, and most suburban businesses have their own lot. Ride-share apps such as Uber and Lyft operate across New York's larger cities, and public transit varies from extensive to minimal.

I was at this small slice place post a not-so-filling meal at the trendy Umeko (review forthcoming) with one other who was also a bit hungry a while back, with the other person having heard of this spot. As this is a more artisanal pizza spot, I went with the Broken Burrata, with San Marzano tomatoes, grated Parmigiano Reggiano, Pecorino Romano, fresh mozzarella, fresh basil, and extra virgin olive oil. The crust was the most noticeable part, airy with an almost cracker-thin texture, with the bottom slightly burnt, but not too much so that there's unwanted bitterness. The tomato sauce was pretty solid, being fresh with herbs, along with a bit of sweetness and sourness. I guess my only complaint would be that the grated cheese blend felt just a bit too salty, and I think it would work better if the blend had more mozzarella, or possibly, I would skip adding the grated cheese next time. Otherwise, it felt a bit oily, as there was a tad too much EVOO. In terms of the topping, the smaller pieces from it being broken were a nice touch, as you could get a bite with it pretty often. This added a bit of creaminess, of course, and went well with the rest of the pie. The other person had th

Great slice!!! Really high quality delicious pizza. Clearly they are passionate about what they do. Came on a Sunday afternoon, watched them cranking out pizzas. Got the broken burrata slice fresh out of the oven. Amazing! Loved the sauce, light crispy crust and creamy burrata. Owner was very friendly and asked what we thought. Overall great slice with little to no line to wait.

Another legendary pizza spot, situated right in the ultimate pizza district alongside greats like L'Industrie, Mama's Too, John's of Bleecker, Bleecker Street Pizza, and now, Fermento. The pizza here is spectacular. The dough is on a completely different levelβ€”incredibly light, crispy, and full of flavor. No dry spots - areas on the pie that have no sauce - on the pizza I had. This is expert and well-crafted pizza made with high quality ingredients and love.

Came here for the first time last night around 8:30 and I’m still thinking about this pizza today. The staff was super friendly from the moment we walked in and you can tell they really care about what they’re serving. The pizza was absolutely incredible. What made it stand out for me was the way they finish it off right before boxing it up,freshly grated parmesan, fresh basil, and a drizzle of extra virgin olive oil. That little detail made such a huge difference and gave it that authentic old school Italian pizza feel. The crust was perfectly crispy on the outside but still soft and airy inside. The sauce had the perfect balance and tasted fresh, not overly sweet or heavy. I was honestly surprised that even without an overload of cheese, the cheese pull was insane. That’s when you know the ingredients are high quality. I also got a Sicilian slice and they treated even a single slice with the same attention fresh parm grated right on top with olive oil to finish it. That was next level to me because most places don’t care that much about single slices. Everything tasted fresh, high quality, and made with care. Easily one of the best pizza spots I’ve had in NYC. Fermento’s Pizza is a top of the line gourmet pizza restaurant! The crust is perfectly fermented (3 days to be exact) to give the crust a unique light, airy, and crisp with incredible flavor in every bite. It also does leave you feeling stomach feeling heavy. Really high quality crust. They also have a very high quality tasting gluten free crust. You will taste the quality of the ingredients with each bite, from the rich, balanced tomato sauce to the fresh toppings. The attention to detail really sets this place apart. Everything feels thoughtfully made and authentically crafted. Ask for Hector who is absolutely the best, and welcoming, the vibe is relaxed and inviting! Perfect for grabbing a slice or sitting down to enjoy a full pie. If you’re in the neighborhood, Fermento’s is definitely worth a visit. Easily one of the best pizza spots around the West Village area at 226 Varick near the corner of Clarkson, across from Shake Shack .
